Ingredients

  • 2 - 3 teaspoons coconut oil
  • 1/2 cup chopped onion
  • 1 clove garlic, minced
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1 pinch cinnamon (a little goes a long way)
  • 1 pinch cloves (a little goes a long way)
  • jalapeno pepper, chopped (optional)
  • 1 package frozen green peas (10 oz)
  • 2 - 3 medium Roma tomatoes, chopped
  • salt & pepper, to taste
  • cilantro for garnish
  • brown rice or your choice of rice, cooked

How To Make indian-style spiced rice and peas

  • Step 1
    Heat oil in a skillet over medium heat. Add the onion and garlic, and sprinkle with spices and pepper. Stir frequently for approximately 5 minutes.
  • Step 2
    Add tomatoes and peas along with salt and pepper. Mix well and simmer for approximately 5 minutes covered.
  • Step 3
    Add cooked rice (approximately 2-3 cups) until well blended and nice and hot.
  • Step 4
    Add rice to a serving bowl and sprinkle with chopped cilantro.
