Ingredients
- 2 - 3 teaspoons coconut oil
- 1/2 cup chopped onion
- 1 clove garlic, minced
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cumin
- 1 pinch cinnamon (a little goes a long way)
- 1 pinch cloves (a little goes a long way)
- jalapeno pepper, chopped (optional)
- 1 package frozen green peas (10 oz)
- 2 - 3 medium Roma tomatoes, chopped
- salt & pepper, to taste
- cilantro for garnish
- brown rice or your choice of rice, cooked
How To Make indian-style spiced rice and peas

Step 1Heat oil in a skillet over medium heat. Add the onion and garlic, and sprinkle with spices and pepper. Stir frequently for approximately 5 minutes.

Step 2Add tomatoes and peas along with salt and pepper. Mix well and simmer for approximately 5 minutes covered.

Step 3Add cooked rice (approximately 2-3 cups) until well blended and nice and hot.

Step 4Add rice to a serving bowl and sprinkle with chopped cilantro.
