Ingredients

  • 2 cups brown rice
  • 3 cups chicken broth or vegetable broth
  • 1 medium-sized onion, chopped
  • 2 teaspoons vegetable oil
  • 6 ounces tomato paste
  • 1 teaspoon rawspicebar berbere spice
  • kosher salt, to taste
  • 2 tomatoes, diced
  • 3 small red bell peppers, diced
  • 2 cloves garlic

  • Step 1
    In a blender, combine tomatoes, garlic, onion and peppers and pulse until smooth.
  • Step 2
    In a saucepan, add oil, salt and puree.
  • Step 3
    Add the tomato paste and combine to cook and let brown, 6-8 minutes. Add broth and bring to boil.
  • Step 4
    Once boiling, reduce heat and cover pan.
  • Step 5
    Cook on low heat until rice is tender and liquid has been absorbed, about 25 minutes. Serve with garnishes of tomato & enjoy!
