- 3 cups chicken broth or vegetable broth
- 1 medium-sized onion, chopped
- 2 teaspoons vegetable oil
- 6 ounces tomato paste
- 1 teaspoon rawspicebar berbere spice
- kosher salt, to taste
- 2 tomatoes, diced
- 3 small red bell peppers, diced
- 2 cloves garlic

Step 1In a blender, combine tomatoes, garlic, onion and peppers and pulse until smooth.

Step 2In a saucepan, add oil, salt and puree.

Step 3Add the tomato paste and combine to cook and let brown, 6-8 minutes. Add broth and bring to boil.

Step 4Once boiling, reduce heat and cover pan.
