Found this recipe many years ago. The ingredients were what intrigued me, as I liked them all.It is so good. It was different from anything else I had tried. Hope you will give it a try.

Ingredients

  • 2 c
    swiss cheese, shredded
  • 1 c
    cottage cheese, small curd
  • 1 c
    miracle whip salad dressing
  • 1/2 tsp
    garlic salt
  • 1/4 tsp
    pepper
  • 3 c
    rice, cooked and hot
  • 1 pkg
    10-oz. frozen chopped broccoli,thawed and drained
  • 1 pkg
    10-oz. frozen greed peas,thawed and drained
  • 1/4 c
    green onions, sliced

How to Make Green Rice Casserole

Step-by-Step

  1. Preheat oven to 350 degrees.
    Cook 1 cup uncooked rice as directed on package. This will give you 3 cups cooked rice needed for this recipe.
  2. In a large bowl combine 1-1/2 cups of the Swiss cheese, cottage cheese, salad dressing, salt and pepper. Stir in rice, broccoli, peas and onions. Pour into a lightly greased 2 quart casserole. Bake at 350 degrees for 30 minutes. At the end of 30 minutes top with remaining 1/2 cup of the Swiss Cheese and bake 5 minutes longer or until cheese is melted.
