1Preheat oven to 350 degrees.
Cook 1 cup uncooked rice as directed on package. This will give you 3 cups cooked rice needed for this recipe.
2In a large bowl combine 1-1/2 cups of the Swiss cheese, cottage cheese, salad dressing, salt and pepper. Stir in rice, broccoli, peas and onions. Pour into a lightly greased 2 quart casserole. Bake at 350 degrees for 30 minutes. At the end of 30 minutes top with remaining 1/2 cup of the Swiss Cheese and bake 5 minutes longer or until cheese is melted.
