fried rice
I have been making this rice for about 40 years. It can be a meal on it's own, or served with other oriental foods. Sometimes I use it as a side dish for steak.

Ingredients
- 1 tablespoon vegetable oil
- 1/2 cup cooked chicken, pork or ham finely diced
- 4 ounces mushrooms, chopped
- 1 quart cooked white rice, cold
- 1 small onion, chopped
- 2 tablespoons soy sauce
- 1 large egg
- 1/4 cup frozen peas, thawed (optional)
- - soy sauce, to taste
How To Make fried rice

Step 1Heat oil in large frying pan or wok. Stir fry the meat until browned. Add the mushrooms and cold rice, stir together.

Step 2Add the onions and 2 tablespoons soy sauce, stir. Fry over medium heat for about 10 minutes.

Step 3Meanwhile, in a small fry pan scramble the egg with a little water.

Step 4Add the egg and thawed peas (optional) to the rice mixture. If color isn't dark enough add more soy sauce. Cook a few minutes longer.
