I have been making this rice for about 40 years. It can be a meal on it's own, or served with other oriental foods. Sometimes I use it as a side dish for steak.

Ingredients For fried rice

  • 1 Tbsp
    vegetable oil
  • 1/2 c
    cooked chicken, pork or ham finely diced
  • 4 oz
    mushrooms, chopped
  • 1 qt
    cooked white rice, cold
  • 1 sm
    onion, chopped
  • 2 Tbsp
    soy sauce
  • 1 lg
    egg
  • 1/4 c
    frozen peas, thawed (optional)
  • soy sauce, to taste

How To Make fried rice

  • 1
    Heat oil in large frying pan or wok. Stir fry the meat until browned. Add the mushrooms and cold rice, stir together.

    Add the onions and 2 tablespoons soy sauce, stir. Fry over medium heat for about 10 minutes.

    Meanwhile, in a small fry pan scramble the egg with a little water.

    Add the egg and thawed peas (optional) to the rice mixture. If color isn't dark enough add more soy sauce. Cook a few minutes longer.
