This is great served hot or cold! Excellent recipe for left-over rice.

    hard boiled eggs
  • 3 c
    cooked rice, warm
  • 1 oz
    jar pimento pieces
  • 1 small
    onion, diced
  • 3/4 c
    hellman's mayonnaise (optional)
  • 1 box
    frozen bird's eye peas
  • 8 oz
    swiss cheese, 1/2
  • ·
    salt to taste

How to Make Egg & Rice Salad


  1. Place Birds Eye Peas in colander and run warm water over peas to break apart.
  2. Combine all ingredients in large bowl and mix.
