Ingredients
- 6 - hard boiled eggs
- 3 cups cooked rice, warm
- 1 ounce jar pimento pieces
- 1 small onion, diced
- 3/4 cup hellman's mayonnaise (optional)
- 1 box frozen bird's eye peas
- 8 ounces swiss cheese, 1/2
- - salt to taste
How To Make egg & rice salad

Step 1Place Birds Eye Peas in colander and run warm water over peas to break apart.

Step 2Combine all ingredients in large bowl and mix.
