This is great served hot or cold! Excellent recipe for left-over rice.

Ingredients

  • 6 - hard boiled eggs
  • 3 cups cooked rice, warm
  • 1 ounce jar pimento pieces
  • 1 small onion, diced
  • 3/4 cup hellman's mayonnaise (optional)
  • 1 box frozen bird's eye peas
  • 8 ounces swiss cheese, 1/2
  • - salt to taste

How To Make egg & rice salad

  • Step 1
    Place Birds Eye Peas in colander and run warm water over peas to break apart.
  • Step 2
    Combine all ingredients in large bowl and mix.
