Ingredients

  • 1 teaspoon high heat cooking oil
  • 2 - eggs, lightly whisked
  • 1 cup frozen mixed vegetables
  • 2 cups cooked brown rice
  • 1/3 cup low salt soy sauce

How To Make easy vegetable fried rice

  • Step 1
    Heat oil in wok or deep skillet.
  • Step 2
    Add whisked eggs to pan, let cook and sit for a minute. Break up eggs with a spatula into small pieces.
  • Step 3
    Add frozen mixed vegetables and cook for 2 minutes, stirring often. Add brown rice and soy sauce to egg and vegetable mixture and cook for 5 minutes or until heated through.
  • Step 4
    Season with salt, pepper ans additional soy sauce to taste.
