Ingredients
- 1 teaspoon high heat cooking oil
- 2 - eggs, lightly whisked
- 1 cup frozen mixed vegetables
- 2 cups cooked brown rice
- 1/3 cup low salt soy sauce
How To Make easy vegetable fried rice

Step 1Heat oil in wok or deep skillet.

Step 2Add whisked eggs to pan, let cook and sit for a minute. Break up eggs with a spatula into small pieces.

Step 3Add frozen mixed vegetables and cook for 2 minutes, stirring often. Add brown rice and soy sauce to egg and vegetable mixture and cook for 5 minutes or until heated through.

Step 4Season with salt, pepper ans additional soy sauce to taste.
