This Spanish rice has a bit of a bite to it. Just so you know before serving to the "little ones".

    3 1/2 cups pre-cooked white rice
  • ·
    1 sm - med yellow onion diced
  • ·
    3 celery stalks diced
  • ·
    1 10oz can ro-tel "original" diced tomatoes w/green chilies
  • ·
    1 small can tomato sauce
  • ·
    1/2 teaspoon chili powder
  • ·
    1 teaspoon lemon juice
  • ·
    1 tbs sugar (optional)
  • ·
    few shakes garlic powder
  • ·
    1/3 cup water
  • ·
    salt/pepper to taste
  • ·
    2 tbs cooking oil

How to Make Easy Spanish Rice


  1. In frying skillet add oil and brown together onion and celery until soft. Add Ro-tel tomatoes, add all spices, sugar and lemon juice. When tomatoes just begin to bubble, add tomato sauce rinsing can with 1/3 cup of water. When sauce is near boiling , lower heat and add rice and stir until sauce is mix well through out the rice. Salt and pepper to taste or diet.
