easy spanish rice

This Spanish rice has a bit of a bite to it. Just so you know before serving to the "little ones".

Ingredients

  • - 3 1/2 cups pre-cooked white rice
  • - 1 sm - med yellow onion diced
  • - 3 celery stalks diced
  • - 1 10oz can ro-tel "original" diced tomatoes w/green chilies
  • - 1 small can tomato sauce
  • - 1/2 teaspoon chili powder
  • - 1 teaspoon lemon juice
  • - 1 tbs sugar (optional)
  • - few shakes garlic powder
  • - 1/3 cup water
  • - salt/pepper to taste
  • - 2 tbs cooking oil

How To Make easy spanish rice

  • Step 1
    In frying skillet add oil and brown together onion and celery until soft. Add Ro-tel tomatoes, add all spices, sugar and lemon juice. When tomatoes just begin to bubble, add tomato sauce rinsing can with 1/3 cup of water. When sauce is near boiling , lower heat and add rice and stir until sauce is mix well through out the rice. Salt and pepper to taste or diet.
