easy coconut rice
This is easy peasy and the ingredients are probably in your pantry right now. The key is to let the rice rest without removing the lid, for the full five minutes. Even if there is a crust on the bottom (yummy), it'll lift right up when you fluff the rice. This recipe is the rice portion of another recipe posted at a different site by Breezermom, but the instructions are my own and based on my experience.

- 1 cup jasmine rice
- 3/4 cup coconut milk (full fat)
- 1 cup water
How To Make easy coconut rice

Step 1Put all ingredients in a medium heavy-bottomed saucepan. Bring to a boil. Stir well and reduce to a simmer.

Step 2Cook for 20 minutes without removing the lid. Remove from heat at 20 minutes. Let rest for 5 minutes, then fluff with a fork.
