easy chinese fried rice

My mom's recipe, really good.

Ingredients

  • 1 tablespoon oil
  • 1 1/2 cups minute rice
  • 1 1/2 cups hot water
  • 3 - eggs-dry scrambled
  • 6 slices bacon...chopped up
  • 4 - green onions
  • 1/2 cup frozen peas
  • - soy sauce, salt and pepper to taste

How To Make easy chinese fried rice

  • Step 1
    Heat oil in Frying Pan. Add minute rice and lightly brown. Turn off heat and add hot water. Give a quick stir, cover and set aside. Let sit at least 7 mins before adding....
  • Step 2
    Chop bacon into smaller bite size pieces. Fry in small frying pan until not quite crisp. Drain all excess fat...add to rice.
  • Step 3
    Scramble eggs in a little margarine but do not add water or milk. Add to Rice. Chop onions and add to rice mix.
  • Step 4
    Stir all together well and then add the soy sauce, salt and pepper to taste. Turn heat on low approx 20 mins to heat thru...Add frozen peas for last 5 mins. Ready to eat when peas are heated...Enjoy!
