This cheesy broccoli and rice is a great way to get your family to eat their greens. Frozen broccoli is cooked with rice and then mixed with cheese. We opted to use shredded cheddar cheese, but Swiss would be great too, and adds its nutty flavor. The melted cheddar cheese made everything creamy. Make sure to top with a little extra cheese when serving. Made in minutes, it's a satisfying and easy side dish.

- 10 ounces frozen broccoli
- 1 cup quick-cooking rice
- 1 cup water
- 1/4 teaspoon salt
- 1 cup shredded cheddar or Swiss cheese
How To Make easy cheesy broccoli and rice

Step 1In a medium saucepan, combine frozen broccoli, uncooked rice, water, and salt. Bring to a boil, stirring frequently to break up frozen broccoli.

Step 2Remove from heat. Cover and let stand for 5 minutes. Return the saucepan to the burner. Over low heat, add cheese, stirring just until cheese is melted. Serve in bowls and sprinkle with additional cheese.
