Ingredients
- 2 cups enriched rice
- 4 cups chicken stock
- 4 cloves garlic, minced
- 1 1/2 cups white onion, diced
- 1 cup green pepper, diced
- 2 tablespoons vegetable oil
- - salt and freshly ground pepper for seasoning
- 1 teaspoon dried thyme
- 1 - bay leafe
- 1/4 teaspoon cayenne pepper (or more for chili-heads)
- 1/4 pound pork sausage
- 1/4 pound ground beef
- 1/2 pound chicken giblets (substitute cubed chicken if opposed to giblets)
- 1 bunch green onions, chopped
How To Make dirty rice

Step 1In colander, rinse rice several times until water runs clear. Place rice in pot and add chicken stock. Bring to a boil and cover and simmer for 20 mins.

Step 2Saute garlic, onions, peppers in vegetable oil until soft. Season with salt, pepper, thyme, bay leaf and cayenne pepper and add to rice.

Step 3Cook sausage and beef together and add to rice.

Step 4In separate pot place giblets, cover with water and simmer for 30 minutes with green onions, salt and pepper. Let cool enough to chop into small dice then add to rice mixture.

Step 5Mix rice well and let simmer on lowest heat for additional 30 minutes stirring often. If mixture begins to get dry add additional chicken stock or water.
