This is a very hot and tasty dish.My family loves it,but if you don't like spicy dishes,use 1 teaspoon of cayenne pepper instead.I sometimes use 1/2 lb ground pork and 1/4 lb chicken gizzards,ground up instead of mushrooms.

WOW!!! This is fantastic! A huge explosion of flavor!! This dish if one of the best I have ever had - absolutely wonderful and a keeper for sure. I cannot wait to make it again for the next potluck get together. I used quick-cooking rice and cooked sweet sausage to great results. Also, just 1 tsp of cayenne was plenty spicy for my wimpy palette. Next time I will double the recipe - It goes fast!

Ingredients

  • 2 teaspoons cayenne pepper
  • 1 1/4 teaspoons each sweet paprika and black pepper
  • 1/2 teaspoon each,dried thyme leaves and dried oregano leaves
  • 1 tablespoon cooking oil
  • 1 tablespoon butter
  • 3 cups finely chopped mushrooms
  • 1/2 cup each,finely chopped onions,celery and green bell pepers
  • 3 teaspoons minced garlic
  • - 2 bay leaves
  • 3 cups chicken stock
  • 1 1/2 cups white rice

How To Make lad's dirty rice

  • Step 1
    Combine seasonings. Set aside.
  • Step 2
    Sauté vegetables in oil, add seasonings, cook until vegetables are tender.
  • Step 3
    Add bay leaf and stock, cook 5 mins.Add rice, stir well, bring to a boil, turn heat to lowest setting.
  • Step 4
    Cover pan and cook 20 mins. Remove bay leaves.
