My Mother-in-law's recipe, my late husband's favorite summertime side dish. Now my grown children ask for it when I come to family gatherings!

Ingredients

  • 1 box chicken rice a roni (with 2t butter)
  • 1/2 - green pepper- chopped
  • 2 - green onions- chopped
  • 8 - black olives- chopped
  • 1 jar marinated artichoke hearts- drained (save oil marinade)
  • 1/3 cup mayonnaise
  • 1/4 teaspoon curry powder (more or less to taste)

How To Make curried rice

  • Step 1
    Cook the Rice a Roni in the 2 T melted butter by the package directions.
  • Step 2
    While that is cooking, chop your green pepper, green onions, olives and drained artichoke hearts.
  • Step 3
    Mix mayonnaise, reserved oil from artichoke hearts and curry powder.
  • Step 4
    When the Rice a Roni is done cooking, mix all veggies into rice and then mix in the curry dressing.
  • Step 5
    Can be served hot or cold.
