Ingredients
- 2 cups long grain rice
- 1/2 cup sultanas
- 1/2 cup dried cranberries
- 1/2 cup pine nuts
- 1/2 large green capsicum finely diced
- 1/2 large red capsicum finely diced
- 1 medium red onion finely diced
- 2 sticks celery finely sliced
- 1 1/2 teaspoons turmeric
- 3 teaspoons good curry powder
- 1/4 cup olive oil
- 1/4 cup lemon juice
- pinch salt to taste
- pinch pepper to tast
How To Make curried rice salad

Step 1Cook rice in a rice cooker putting the turmeric in the water. When cooked spread onto a try to cool.

Step 2Place olive oil, lemon juice and curry powder I to a small jug to combine. Set aside.

Step 3Into a large bowl add all other ingredients. Place rice in when cool, mix together well.

Step 4Add dressing, mixing in really well adding salt and pepper at the same time to tast.

Step 5Serve in a nice bowl and enjoy.
