This is always a hit at my BBQ's and always the first salad to go. It is loved by every one.

  • 2 c
    long grain rice
  • 1/2 c
  • 1/2 c
    dried cranberries
  • 1/2 c
    pine nuts
  • 1/2 large
    green capsicum finely diced
  • 1/2 large
    red capsicum finely diced
  • 1 medium
    red onion finely diced
  • 2 stick
    celery finely sliced
  • 1 1/2 tsp
  • 3 tsp
    good curry powder
  • 1/4 c
    olive oil
  • 1/4 c
    lemon juice
  • pinch
    salt to taste
  • pinch
    pepper to tast

How to Make Curried Rice Salad


  1. Cook rice in a rice cooker putting the turmeric in the water. When cooked spread onto a try to cool.
  2. Place olive oil, lemon juice and curry powder I to a small jug to combine. Set aside.
  3. Into a large bowl add all other ingredients. Place rice in when cool, mix together well.
  4. Add dressing, mixing in really well adding salt and pepper at the same time to tast.
  5. Serve in a nice bowl and enjoy.
