This is always a hit at my BBQ's and always the first salad to go. It is loved by every one.

2 c
long grain rice
1/2 c
1/2 c
dried cranberries
1/2 c
pine nuts
1/2 large
green capsicum finely diced
1/2 large
red capsicum finely diced
1 medium
red onion finely diced
2 stick
celery finely sliced
1 1/2 tsp
3 tsp
good curry powder
1/4 c
olive oil
1/4 c
lemon juice
salt to taste
pepper to tast

How to Make Curried Rice Salad


  • 1Cook rice in a rice cooker putting the turmeric in the water. When cooked spread onto a try to cool.
  • 2Place olive oil, lemon juice and curry powder I to a small jug to combine. Set aside.
  • 3Into a large bowl add all other ingredients. Place rice in when cool, mix together well.
  • 4Add dressing, mixing in really well adding salt and pepper at the same time to tast.
  • 5Serve in a nice bowl and enjoy.
