This is always a hit at my BBQ's and always the first salad to go. It is loved by every one.

Ingredients For curried rice salad

2 clong grain rice

1/2 csultanas
-
1/2 cdried cranberries
-
1/2 cpine nuts

1/2 lggreen capsicum finely diced

1/2 lgred capsicum finely diced

1 mdred onion finely diced

2 stickcelery finely sliced

1 1/2 tspturmeric
-
3 tspgood curry powder
-
1/4 colive oil
-
1/4 clemon juice
-
pinchsalt to taste

pinchpepper to tast
How To Make curried rice salad

1Cook rice in a rice cooker putting the turmeric in the water. When cooked spread onto a try to cool.

2Place olive oil, lemon juice and curry powder I to a small jug to combine. Set aside.

3Into a large bowl add all other ingredients. Place rice in when cool, mix together well.

4Add dressing, mixing in really well adding salt and pepper at the same time to tast.

5Serve in a nice bowl and enjoy.
