curried rice salad

This is always a hit at my BBQ's and always the first salad to go. It is loved by every one.

Ingredients

  • 2 cups long grain rice
  • 1/2 cup sultanas
  • 1/2 cup dried cranberries
  • 1/2 cup pine nuts
  • 1/2 large green capsicum finely diced
  • 1/2 large red capsicum finely diced
  • 1 medium red onion finely diced
  • 2 sticks celery finely sliced
  • 1 1/2 teaspoons turmeric
  • 3 teaspoons good curry powder
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • pinch salt to taste
  • pinch pepper to tast

How To Make curried rice salad

  • Step 1
    Cook rice in a rice cooker putting the turmeric in the water. When cooked spread onto a try to cool.
  • Step 2
    Place olive oil, lemon juice and curry powder I to a small jug to combine. Set aside.
  • Step 3
    Into a large bowl add all other ingredients. Place rice in when cool, mix together well.
  • Step 4
    Add dressing, mixing in really well adding salt and pepper at the same time to tast.
  • Step 5
    Serve in a nice bowl and enjoy.
