Ingredients

  • 2 tsp
    olive oil, extra virgin
  • 1/2 c
    green bell pepper, chopped small
  • 1/2 c
    red bell pepper, chopped small
  • 1 small
    onion, chopped small
  • 3 clove
    garlic, minced
  • 1 c
    uncooked long grain rice
  • 1 can(s)
    15 oz black beans, undrained
  • 1 1/2 c
    water
  • 1/2 tsp
    cumin
  • 1
    bay leaf
  • ·
    pinch of oregano
  • ·
    salt and pepper, to taste

How to Make Cuban Rice and Black Beans

Step-by-Step

  1. Heat oil in medium pan over medium heat.
  2. Add onions, peppers, and garlic and saute about 4-5 minutes until soft.
  3. Add rice, beans, water, cumin. bay leaf, oregano, and salt and pepper.
  4. Simmer on medium-low heat, stirring occasionally, until the rice absorbs most of the water.
  5. Turn down to low and cover completely. Cook for about 20 minutes without taking off lid.
  6. Shut off the heat and let sit for 5 minutes with lid on.
    Serve
