Ingredients
- 2 teaspoons olive oil, extra virgin
- 1/2 cup green bell pepper, chopped small
- 1/2 cup red bell pepper, chopped small
- 1 small onion, chopped small
- 3 cloves garlic, minced
- 1 cup uncooked long grain rice
- 1 can 15 oz black beans, undrained
- 1 1/2 cups water
- 1/2 teaspoon cumin
- 1 bay leaf
- pinch of oregano
- salt and pepper, to taste
How To Make cuban rice and black beans

Step 1Heat oil in medium pan over medium heat.

Step 2Add onions, peppers, and garlic and saute about 4-5 minutes until soft.

Step 3Add rice, beans, water, cumin. bay leaf, oregano, and salt and pepper.

Step 4Simmer on medium-low heat, stirring occasionally, until the rice absorbs most of the water.

Step 5Turn down to low and cover completely. Cook for about 20 minutes without taking off lid.

Step 6Shut off the heat and let sit for 5 minutes with lid on. Serve
