Ingredients For cuban rice and black beans

2 tspolive oil, extra virgin

1/2 cgreen bell pepper, chopped small

1/2 cred bell pepper, chopped small

1 smonion, chopped small

3 clovegarlic, minced

1 cuncooked long grain rice
-
1 can15 oz black beans, undrained

1 1/2 cwater
-
1/2 tspcumin
-
1bay leaf
-
pinch of oregano
-
salt and pepper, to taste
How To Make cuban rice and black beans

1Heat oil in medium pan over medium heat.

2Add onions, peppers, and garlic and saute about 4-5 minutes until soft.

3Add rice, beans, water, cumin. bay leaf, oregano, and salt and pepper.

4Simmer on medium-low heat, stirring occasionally, until the rice absorbs most of the water.

5Turn down to low and cover completely. Cook for about 20 minutes without taking off lid.

6Shut off the heat and let sit for 5 minutes with lid on. Serve
