Ingredients

  • 2 teaspoons olive oil, extra virgin
  • 1/2 cup green bell pepper, chopped small
  • 1/2 cup red bell pepper, chopped small
  • 1 small onion, chopped small
  • 3 cloves garlic, minced
  • 1 cup uncooked long grain rice
  • 1 can 15 oz black beans, undrained
  • 1 1/2 cups water
  • 1/2 teaspoon cumin
  • 1 bay leaf
  • pinch of oregano
  • salt and pepper, to taste

How To Make cuban rice and black beans

  • Step 1
    Heat oil in medium pan over medium heat.
  • Step 2
    Add onions, peppers, and garlic and saute about 4-5 minutes until soft.
  • Step 3
    Add rice, beans, water, cumin. bay leaf, oregano, and salt and pepper.
  • Step 4
    Simmer on medium-low heat, stirring occasionally, until the rice absorbs most of the water.
  • Step 5
    Turn down to low and cover completely. Cook for about 20 minutes without taking off lid.
  • Step 6
    Shut off the heat and let sit for 5 minutes with lid on. Serve
