Ingredients
- 1 tablespoon peanut oil
- 1/3 cup diced red or green bell pepper
- 1/2 cup diced onion
- 2 cups long grain rice, well rinsed
- 1 1/3 cups water
- 2 teaspoons tomato paste
- 1/4 teaspoon freshly ground black pepper
- 2 teaspoons salt
- 2 tablespoons freshly squeezed lime juice
- 1 teaspoon olive oil
How To Make costa rican rice

Step 1Heat the peanut oil in a medium saucepan. Add the bell pepper and onion; cook over medium heat, stirring often, until the onion begins to brown.

Step 2Add the rice, water, tomato paste, black pepper, salt, and lime juice; mix well. Bring the liquid to a boil.

Step 3Add the olive oil to the rice mixture; reduce the heat, and simmer, covered and undisturbed, until all the liquid is absorbed, about 20 minutes.

Step 4Serve hot.
