Ingredients For costa rican rice

  • 1 Tbsp
    peanut oil
  • 1/3 c
    diced red or green bell pepper
  • 1/2 c
    diced onion
  • 2 c
    long grain rice, well rinsed
  • 1 1/3 c
    water
  • 2 tsp
    tomato paste
  • 1/4 tsp
    freshly ground black pepper
  • 2 tsp
    salt
  • 2 Tbsp
    freshly squeezed lime juice
  • 1 tsp
    olive oil

How To Make costa rican rice

  • 1
    Heat the peanut oil in a medium saucepan. Add the bell pepper and onion; cook over medium heat, stirring often, until the onion begins to brown.

    Add the rice, water, tomato paste, black pepper, salt, and lime juice; mix well. Bring the liquid to a boil.

    Add the olive oil to the rice mixture; reduce the heat, and simmer, covered and undisturbed, until all the liquid is absorbed, about 20 minutes.

    Serve hot.
