This goes great with pork chops, chicken and beef. It adds a little vegetables to your meal and makes the plate looks prettier.

  • 1 c
    uncooked , long grain rice
  • 1 1/2 c
    chicken broth
  • 1/2 tsp
    kosher salt
  • 1/2 c
    cooked green peas
  • 1/2 c
    cooked, diced carrots
  • 1/4 c
    cooked, diced red bell pepper

How to Make Confetti Rice


  1. In a mediun sauce pan with a tight fitting lid, combine rice, broth and salt.
  2. Bring to a boil and stir once.
  3. Cover and reduce heat to low.
  4. Simmer for 18 minutes. DO NOT lift the lid or stir.
  5. Remove from heat and let stand covered for 5 minutes.
  6. Add the peas, peppers, and carrots. Stir with a fork to fluff.
  7. Serve immediately.
