How to Make Confetti Rice
- In a mediun sauce pan with a tight fitting lid, combine rice, broth and salt.
- Bring to a boil and stir once.
- Cover and reduce heat to low.
- Simmer for 18 minutes. DO NOT lift the lid or stir.
- Remove from heat and let stand covered for 5 minutes.
- Add the peas, peppers, and carrots. Stir with a fork to fluff.
- Serve immediately.
