Ingredients
- 1 cup uncooked , long grain rice
- 1 1/2 cups chicken broth
- 1/2 teaspoon kosher salt
- 1/2 cup cooked green peas
- 1/2 cup cooked, diced carrots
- 1/4 cup cooked, diced red bell pepper
How To Make confetti rice

Step 1In a mediun sauce pan with a tight fitting lid, combine rice, broth and salt.

Step 2Bring to a boil and stir once.

Step 3Cover and reduce heat to low.

Step 4Simmer for 18 minutes. DO NOT lift the lid or stir.

Step 5Remove from heat and let stand covered for 5 minutes.

Step 6Add the peas, peppers, and carrots. Stir with a fork to fluff.

Step 7Serve immediately.
