Ingredients

  • 1 tablespoon canola oil
  • 1/4 cup finely chopped onion
  • 1 - garlic clove, minced
  • 1 cup long grain rice
  • 1/4 cup finely diced carrots
  • 1/4 cup finely chopped green or red bell pepper
  • 1/4 cup frozen corn
  • 1/4 cup frresh or frozen peas
  • 2 cups defatted low-sodium chicken broth
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

How To Make colorful rice

  • Step 1
    Heat oil in medium saucepan over medium heat. Saute onion, garlic, and rice for 4-5 minutes, stirring constantly.
  • Step 2
    Add remaining ingredients and bring to a boil. Reduce heat to low, cover, and simmer 20 minutes or until rice is tender.
