  • 1 Tbsp
    canola oil
  • 1/4 c
    finely chopped onion
  • 1
    garlic clove, minced
  • 1 c
    long grain rice
  • 1/4 c
    finely diced carrots
  • 1/4 c
    finely chopped green or red bell pepper
  • 1/4 c
    frozen corn
  • 1/4 c
    frresh or frozen peas
  • 2 c
    defatted low-sodium chicken broth
  • 1/4 tsp
  • 1/8 tsp
    black pepper

How to Make Colorful Rice


  1. Heat oil in medium saucepan over medium heat. Saute onion, garlic, and rice for 4-5 minutes, stirring constantly.
  2. Add remaining ingredients and bring to a boil. Reduce heat to low, cover, and simmer 20 minutes or until rice is tender.
  3. PER 1/2 CUP Exchanges
