Ingredients
- 1 tablespoon canola oil
- 1/4 cup finely chopped onion
- 1 - garlic clove, minced
- 1 cup long grain rice
- 1/4 cup finely diced carrots
- 1/4 cup finely chopped green or red bell pepper
- 1/4 cup frozen corn
- 1/4 cup frresh or frozen peas
- 2 cups defatted low-sodium chicken broth
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
How To Make colorful rice

Step 1Heat oil in medium saucepan over medium heat. Saute onion, garlic, and rice for 4-5 minutes, stirring constantly.

Step 2Add remaining ingredients and bring to a boil. Reduce heat to low, cover, and simmer 20 minutes or until rice is tender.
