Ingredients

  • - 1 1/2 cups chicken broth
  • - 1 cup coconut milk
  • - 2 teaspoons sugar
  • - 1 teaspoon kosher salt
  • - 1 cup basmati or wild jasmine rice
  • - 2 tablespoons fresh lime juice
  • - 2 tablespoons unsalted butter

How To Make coconut rice

  • Step 1
    bring broth, coconut milk, sugar and salt to a boil. Stir in the rice. Cover, reduce heat to low, and simmer 15 minutes or until liquid is absorbed. Remove from heat and let sit for five minutes before stirring. Finish with lime juice and butter. Fluff with a fork and serve. Makes 3 cups
