cilantro lime rice
This rice is literally in the "limelight" at gatherings, especially when I do a burrito bar. It's a great companion/side to a spicy main dish.

Ingredients
- 1 cup rice, long grain
- 1 tablespoon oil
- 1 teaspoon salt
- - *zest of 1/2 a lime
- - *the juice of 1/2 a lime (more if you like)
- 3 tablespoons finely chopped cilantro
- - *water, enough to cover 3/4 of an inch of the rice. if you're familiar with measuring the water with the pinky finger method, that's what i do. if you've had success using the directions on the rice, then by all means use it.
How To Make cilantro lime rice

Step 1Rinse rice. Combine rice, oil, salt, water, and lime zest. Bring to a boil, cover, and cook on very low heat for 15-20 minutes, or until the rice is fluffy.

Step 2Remove from heat and transfer to a mixing bowl. Add lime juice and chopped cilantro. Give it a good mix and enjoy!
