This rice is literally in the limelight at gatherings, especially when I do a burrito bar. It's a great companion/side to a spicy main dish.

This cilantro lime rice will be a delicious addition to your tacos, burritos, enchiladas, or any Mexican-inspired meal you make. Light and fluffy, it's a little zesty, tangy, and tart. Fresh cilantro adds a bright, fresh flavor to the side dish.

Ingredients

  • 1 cup long grain rice
  • 1 tablespoon oil
  • 1 teaspoon salt
  • 1 3/4 - 2 cups water
  • 1/2 lime, zested
  • 1/2 lime, juiced, more if you'd like
  • 3 tablespoons finely chopped cilantro

How To Make cilantro lime rice

  • Rinse the rice.
    Step 1
    Rinse rice.
  • Combine rice, oil, salt, water, and lime zest. Bring to a boil, cover, and cook on very low heat for 15-20 minutes or until the rice is fluffy.
