Ingredients
- 1 cup jasmine rice
- 3 -4 tablespoon coconut oil
- 1 medium onion, diced
- 3 cloves garlic minced
- 1 bay leaf
- 1 3/4 cups chicken broth
- 3 tablespoons butter
- 2 small fresh limes
- 3 -4 tablespoon cilantro, dried or fresh
How To Make cilantro lime rice

Step 1Rinse rice three times or when water is clear. Set a side. Zest and juice 1 1/2 lime. Set aside juice.

Step 2Heat coconut oil in a large pan, over med- high heat add onions and sauté until tender. Add rice and stir until rice is slightly opaque add garlic, bay leaf and lime zest. Let cook for a minute.

Step 3Stir in chicken stock and cover. Reduce heat to low and cook for 15 mins. Remove from heat and let sit for 20 minutes more. Stir and if still water let sit a little bit more.

Step 4Add butter, and lime juice and the cilantro. Stir and remove the bay leaf. Serve the other 1/2 lime as a garnish.
