Cilantro Lime Rice

Ingredients

1 Tbspcanola oil

2 clovegarlic, minced

1/2 mediumonion, chopped

1 1/2 cwhite long-grain rice (or basmatic rice)

1/2 tspsalt

3 clow-sodium chicken broth
-
2 mediumlimes, zested and juiced
-
1/2 cchopped cilantro (more or less, as preferred)
How to Make Cilantro Lime Rice
- Heat oil in a large saucepan. Add onion and garlic, and sauté over medium heat for about 2 minutes or until onion is soft. Add rice and salt, and cook 3 minutes.
- Add the broth and stir. Add half of the lime juice and lime zest, and bring to a boil. Once it reaches a boil, turn heat to very low, cover pan, and let it simmer for 10 to 15 minutes or until rice has absorbed all the liquid. Add more broth (or water) if needed).
- Just before serving, add remaining lime juice, lime zest, and fresh chopped cilantro, and serve immediately.
