This side dish goes well with any type of Mexican meal. I usually use a combination of white and brown jasmine rice.

Ingredients
- 1 1/2 cups water
- 1 1/2 cups chicken broth (or vegetable broth)
- 1 1/2 cups long grain rice
- 1/2 teaspoon salt
- 1 teaspoon lime zest
- 2 tablespoons freshly squeezed lime juice
- 1/2 cup cilantro, roughly chopped
- 2 tablespoons butter
How To Make cilantro lime rice

Step 1Measure rice into a pot. Add salt, water and broth. Bring just to a boil. Reduce heat and add butter. Cover and cook 15-20 minutes until liquid is absorbed and rice is soft.

Step 2While the rice is cooking, zest the lime. Squeeze the lime juice into a bowl with the zest. Set aside.

Step 3Chop the cilantro. Set aside.

Step 4When the rice is done cooking, stir well. Add the lime zest, juice and cilantro.

Step 5Stir well. Keep covered until served.
