This side dish goes well with any type of Mexican meal. I usually use a combination of white and brown jasmine rice.

Ingredients

  • 1 1/2 c
    water
  • 1 1/2 c
    chicken broth (or vegetable broth)
  • 1 1/2 c
    long grain rice
  • 1/2 tsp
    salt
  • 1 tsp
    lime zest
  • 2 Tbsp
    freshly squeezed lime juice
  • 1/2 c
    cilantro, roughly chopped
  • 2 Tbsp
    butter

How to Make Cilantro Lime Rice

Step-by-Step

  1. Measure rice into a pot. Add salt, water and broth. Bring just to a boil. Reduce heat and add butter. Cover and cook 15-20 minutes until liquid is absorbed and rice is soft.
  2. While the rice is cooking, zest the lime. Squeeze the lime juice into a bowl with the zest. Set aside.
  3. Chop the cilantro. Set aside.
  4. When the rice is done cooking, stir well. Add the lime zest, juice and cilantro.
  5. Stir well. Keep covered until served.
