cilantro lime rice

This side dish goes well with any type of Mexican meal. I usually use a combination of white and brown jasmine rice.

Ingredients

  • 1 1/2 cups water
  • 1 1/2 cups chicken broth (or vegetable broth)
  • 1 1/2 cups long grain rice
  • 1/2 teaspoon salt
  • 1 teaspoon lime zest
  • 2 tablespoons freshly squeezed lime juice
  • 1/2 cup cilantro, roughly chopped
  • 2 tablespoons butter

How To Make cilantro lime rice

  • Step 1
    Measure rice into a pot. Add salt, water and broth. Bring just to a boil. Reduce heat and add butter. Cover and cook 15-20 minutes until liquid is absorbed and rice is soft.
  • Step 2
    While the rice is cooking, zest the lime. Squeeze the lime juice into a bowl with the zest. Set aside.
  • Step 3
    Chop the cilantro. Set aside.
  • Step 4
    When the rice is done cooking, stir well. Add the lime zest, juice and cilantro.
  • Step 5
    Stir well. Keep covered until served.
