This is a nice rice pilaf to serve with pork. I love apples with pork and the apple cider adds a sweetness to the pilaf.

  • 1 c
    long grain rice, uncooked
  • 3 Tbsp
    butter, melted
  • 3/4 c
    chopped celery
  • 1/2 c
    chopped onion
  • 1 tsp
    grated orange rind
  • 1/4 tsp
  • 1/4 tsp
  • 1/4 c
    minced fresh parsley, divided
  • 1/4 tsp
    dried rosemary, crushed
  • 1 3/4 c
    boiling apple cider

How to Make Cider Rice Pilaf


  1. Saute rice in butter in a large skillet over medium heat until golden.
  2. Add the celery and the next 4 ingredients, and saute 5 minutes. Stir in 2 tablespoons parsley and rosemary. Stir in boiling apple cider; cover, reduce heat, and simmer 30 minutes or until rice is tender and liquid is absorbed.
  3. Sprinkle with the remaining 2 tablespoons parsley. Serve immediately.
