This is a nice rice pilaf to serve with pork. I love apples with pork and the apple cider adds a sweetness to the pilaf.

Ingredients

  • 1 cup long grain rice, uncooked
  • 3 tablespoons butter, melted
  • 3/4 cup chopped celery
  • 1/2 cup chopped onion
  • 1 teaspoon grated orange rind
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup minced fresh parsley, divided
  • 1/4 teaspoon dried rosemary, crushed
  • 1 3/4 cups boiling apple cider

How To Make cider rice pilaf

  • Step 1
    Saute rice in butter in a large skillet over medium heat until golden.
  • Step 2
    Add the celery and the next 4 ingredients, and saute 5 minutes. Stir in 2 tablespoons parsley and rosemary. Stir in boiling apple cider; cover, reduce heat, and simmer 30 minutes or until rice is tender and liquid is absorbed.
  • Step 3
    Sprinkle with the remaining 2 tablespoons parsley. Serve immediately.
