chipotle's cilantro lime rice (copycat)

Chipotle is just okay in my book. The servings are too huge and the food is (IMHO) mediocre EXCEPT FOR THE CILANTRO LIME RICE!!! I've tried many a copycat recipe, and this one takes the best of several, plus lightens it up just a little.

Ingredients

  • 2 teaspoons canola oil
  • 1 cup basmati rice
  • 1 - bay leaf
  • 1/2 teaspoon salt (to taste)
  • 2 cups water
  • 2 teaspoons butter
  • 3 tablespoons cilantro, minced
  • 1 tablespoon freshly squeezed lime juice
  • 1 tablespoon freshly squeezed lemon juice

How To Make chipotle's cilantro lime rice (copycat)

  • Step 1
    Heat the oil in a heavy pot over medium heat. Add the rice and bay leaf. Saute for several minutes, stirring to keep rice from burning. Don't let it brown. Add the water and salt, stir and bring to a boil. Cover the pot and simmer until the water has evaporated, about 15 minutes. Remove from heat.
  • Step 2
    Remove and discard the bay leaf. Add the butter, cilantro, and the juices. Stir well to combine. Adjust butter and salt to your taste.
