I mentioned in other recipes, that Mom loved having theme dinner parties, and this Chinese one was very memorable to me not only for the food, but that I got to help Mom hang paper lanterns and take out all the chairs to turn our family room into a Chinese restaurant! I was very little, but being held up in Mom's arms to hang those lanterns was a great experience...

Ingredients
- 2 - eggs
- 1 - squirt oil
- 2 - whole green onions, chopped
- 3 tablespoons bacon drippings
- 2 cups cooked rice
- 1 teaspoon accent
- 1/2 teaspoon sugar
- 1 dash soy sauce
- 1 dash salt
- 2 cups cooked meat
How To Make chinese fried rice, mom

Step 1Beat eggs and scramble in hot oil. remove while moist. Chop onions and saute in bacon drippings. Add cold rice to onion, add accent and sugar with enough soy sauce and salt to taste. Simmer until warm. Add whatever meat you prefer, mix in with the egg and garnish with green onions.
