1Place carrots in a sauce pan, cover with water and boil for 5 minutes. Add soy beans/peas and continue cooking for another 5 minutes. Strain and set aside.
2Heat a wok or large frying pan. Add a small amount of vegetable oil and the onions. Cook until the onions are translucent. Add the garlic and allow to cook for a minute, turning often to ensure that the garlic does not burn. Add the carrots and soy beans/peas. Allow to cook for an additional minute.
3Beat the two eggs together, then add to the vegetables, stirring constantly. Once the egg is cooked, add the rice. Continue to cook and stir the rice until everything is incorporated. Add soy sauce to taste. Remove rice from the stove and stir in sesame oil to taste. Remember that a little goes a long way. Enjoy!!
