chicken parsley rice

My son suggested this with dinner tonight. (We had Tilapia with lemon butter & dill) It was so good! Hubby even said it tasted a lot like Risotto. :) A very quick & easy side dish.

Ingredients

  • 1 cup rice (long cooking kind)
  • 2 cups water
  • 1 tablespoon chicken boullion
  • 2-3 tablespoons butter
  • 2 tablespoons parsley
  • 1/2 cup shredded cheese (i used 4-cheese pizza blend)

How To Make chicken parsley rice

  • Step 1
    In a saucepan, combine all ingredients.
  • Step 2
    Bring to a low boil, then turn down to simmer for 15-20 minutes, or until rice is tender and liquid absorbed.
  • Step 3
    Stir frequently to keep the rice from sticking.
