chicken parsley rice

My son suggested this with dinner tonight. (We had Tilapia with lemon butter & dill) It was so good! Hubby even said it tasted a lot like Risotto. :) A very quick & easy side dish.

Ingredients
- 1 cup rice (long cooking kind)
- 2 cups water
- 1 tablespoon chicken boullion
- 2-3 tablespoons butter
- 2 tablespoons parsley
- 1/2 cup shredded cheese (i used 4-cheese pizza blend)
How To Make chicken parsley rice

Step 1In a saucepan, combine all ingredients.

Step 2Bring to a low boil, then turn down to simmer for 15-20 minutes, or until rice is tender and liquid absorbed.

Step 3Stir frequently to keep the rice from sticking.
