Ingredients

  • 1 c
    diced carrots
  • 1 c
    diced celery
  • 1 c
    sliced mushrooms
  • 1 c
    diced red pepper
  • 1 c
    diced onion
  • 1 clove
    garlic
  • 2 Tbsp
    olive oil, light
  • 2 Tbsp
    flour
  • 1 tsp
    salt
  • 1/2 tsp
    black pepper
  • 1 tsp
    fresh thyme
  • 1 Tbsp
    fresh parsley
  • 1 c
    milk
  • 1 c
    chicken broth
  • 1 c
    uncle ben's converted rice
  • 2 c
    frozen broccoli
  • 3 oz
    velveeta cheese

How to Make Cheesy vegetable rice

Step-by-Step

  1. saute vegetables in olive oil till tender.
    Add flour and stir a minute or two. Add milk, broth and herbs and seasonings.
    Add rice and broccoli and simmer twenty minutes till tender. Top with Velveeta cheese and allow to melt. Stir and serve
