Ingredients
- 1 cup diced carrots
- 1 cup diced celery
- 1 cup sliced mushrooms
- 1 cup diced red pepper
- 1 cup diced onion
- 1 clove garlic
- 2 tablespoons olive oil, light
- 2 tablespoons flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon fresh thyme
- 1 tablespoon fresh parsley
- 1 cup milk
- 1 cup chicken broth
- 1 cup uncle ben's converted rice
- 2 cups frozen broccoli
- 3 ounces velveeta cheese
How To Make cheesy vegetable rice

Step 1saute vegetables in olive oil till tender. Add flour and stir a minute or two. Add milk, broth and herbs and seasonings. Add rice and broccoli and simmer twenty minutes till tender. Top with Velveeta cheese and allow to melt. Stir and serve
