A lovely Costa Rican rice dish to serve with beans or meats.

Ingredients

  • 1 1/2 cups long grain rice
  • 2 tablespoons vegetable oil
  • 1/2 small white onion, chopped
  • 1/2 cup red bell pepper,chopped
  • 1 clove garlic, minced
  • 2 1/2 cups water
  • 1/2 teaspoon salt (more to taste)

How To Make central american rice

  • Step 1
    Rinse rice thoroughly in a strainer until the water runs clear. Let is drain well.
  • Step 2
    Heat oil in a deep skillet over medium heat. Add the rice and stir until slightly brown. Add onions, bell pepper, and garlic. Saute 1-2 minutes.
  • Step 3
    Add the water and salt; cover and cook until all water is absorbed. If more water is needed to get the rice tender, add very small amounts at a time.
  • Step 4
    Allow rice to sit off heat for 10 minutes.
