A lovely Costa Rican rice dish to serve with beans or meats.

  • 1 1/2 c
    long grain rice
  • 2 Tbsp
    vegetable oil
  • 1/2 small
    white onion, chopped
  • 1/2 c
    red bell pepper,chopped
  • 1 clove
    garlic, minced
  • 2 1/2 c
  • 1/2 tsp
    salt (more to taste)

How to Make Central American Rice


  1. Rinse rice thoroughly in a strainer until the water runs clear. Let is drain well.
  2. Heat oil in a deep skillet over medium heat. Add the rice and stir until slightly brown. Add onions, bell pepper, and garlic. Saute 1-2 minutes.
  3. Add the water and salt; cover and cook until all water is absorbed. If more water is needed to get the rice tender, add very small amounts at a time.
  4. Allow rice to sit off heat for 10 minutes.
