Ingredients
- 1 - ham hock
- 1 pound black beans
- 1 large onion, chopped
- 1 - garlic clove
- 1 - green bell pepper chopped
- 2 teaspoons olive oil, extra virgin
- 1 teaspoon oregano
- 3 - bay leaves
- 1/2 cup vinegar
- 2 cups cooked brown rice
How To Make black beans and rice

Step 1Trim fat from ham hock.

Step 2Wash the beans and soak overnight in 2 quarts of cold water.

Step 3Saute the onion (and it\'s just as good if you leave the onion raw), garlic and pepper in the oil.

Step 4Combine all the ingredients except the vinegar and rice, and cook over low heat until the beans are tender.

Step 5Add the vinegar and serve over the rice.
