Ingredients

  • 1 - ham hock
  • 1 pound black beans
  • 1 large onion, chopped
  • 1 - garlic clove
  • 1 - green bell pepper chopped
  • 2 teaspoons olive oil, extra virgin
  • 1 teaspoon oregano
  • 3 - bay leaves
  • 1/2 cup vinegar
  • 2 cups cooked brown rice

How To Make black beans and rice

  • Step 1
    Trim fat from ham hock.
  • Step 2
    Wash the beans and soak overnight in 2 quarts of cold water.
  • Step 3
    Saute the onion (and it\'s just as good if you leave the onion raw), garlic and pepper in the oil.
  • Step 4
    Combine all the ingredients except the vinegar and rice, and cook over low heat until the beans are tender.
  • Step 5
    Add the vinegar and serve over the rice.
