"black and red beans mamposteao"

This is my favorite side and is good for bbq chicken, steaks, fish and roast pork. This is my own recipe.

Ingredients

  • 1 cup rice, cooked and cooled
  • clarified butter or olive oil
  • 4 slices bacon
  • 2 ounces smoke ham
  • 1 sweet plantains
  • 1 ounce onion
  • 1 ounce green pepper
  • 1 ounce garlic
  • 1 ounce shallots
  • 1 ounce chives
  • 3 ounces black beans
  • 3 ounces red beans
  • 8 ounces chicken broth
  • cilantro
  • tropical seasoning (if you don't have the seasoning can use a mix of paprika, coriander powder, onion powder, garlic powder, a little cumin and a little sugar.)
  • salt and pepper

How To Make "black and red beans mamposteao"

  • Step 1
    Cut the bacon and the smoke ham y small dice, the sweet plantains in dice, the onion, green pepper, shallots in small dice and chopped the chives, garlic and cilantro.
  • Step 2
    In a pan add a little clarified butter or olive oil for the saute and add the bacon and the smoke ham cook for 3 to 4 minutes and add the sweet plantain and cook until the plantain have a golden color.
  • Step 3
    Add the onion, green pepper, shallots, chives, garlic, pepper and salt and stir for a few minutes and add the beans, the tropical seasoning and 6oz of chicken broth and cook for 6 to 8 minutes until beans are cooked (add more chicken broth it if necessary and seasoning for the color).
  • Step 4
    Finaly add the cilantro and then the rice and saute for a few minutes (2 to 3) on high fire.The rice should be slightly wet, if necessary at this point add a little chicken broth.
