Ingredients For betty's easy arabic rice

  • 1/2 c
    pine nuts
  • 1/2 c
    slithered almonds
  • 1/4 c
    butter (not margarine)
  • 1 md
    onion, diced fine
  • 1/2 lb
    lamb mince (250g)
  • 1 tsp
    ground cinnamon
  • 1 tsp
    ground allspice
  • salt and pepper, to taste
  • a handful of sultanas (about 1/2 cup)
  • 1 c
    basamati rice, raw
  • 1/4 tsp
    saffron (or saffron flavour)
  • 1/4 c
    roughly chopped parsley to serve

How To Make betty's easy arabic rice

    Dry roast the nuts together in a pan over low heat in a heavy-based frying pan- stir often so they don't burn. Will take about 5 - 7 minutes - they should become golden and light caramel in colour.

    While this is occurring, start the rice cooking process and cook according to the box instructions with the saffron added in (absorption method is recommended).

    Heat the butter and add the onions, cook until translucent. Add the meat and use the wooden spoon to break up the pieces.

    Add the spices and sultanas. Stir and once cooked turn off the heat and leave in the pan.

    Once the rice is cooked, spoon the rice into the pan and gently fold. Top with chopped parsley and serve.
