Ingredients
- 1/2 cup pine nuts
- 1/2 cup slithered almonds
- 1/4 cup butter (not margarine)
- 1 medium onion, diced fine
- 1/2 pound lamb mince (250g)
- 1 teaspoon ground cinnamon
- 1 teaspoon ground allspice
- salt and pepper, to taste
- a handful of sultanas (about 1/2 cup)
- 1 cup basamati rice, raw
- 1/4 teaspoon saffron (or saffron flavour)
- 1/4 cup roughly chopped parsley to serve

Step 1Dry roast the nuts together in a pan over low heat in a heavy-based frying pan- stir often so they don't burn. Will take about 5 - 7 minutes - they should become golden and light caramel in colour.

Step 2While this is occurring, start the rice cooking process and cook according to the box instructions with the saffron added in (absorption method is recommended).

Step 3Heat the butter and add the onions, cook until translucent. Add the meat and use the wooden spoon to break up the pieces.

Step 4Add the spices and sultanas. Stir and once cooked turn off the heat and leave in the pan.

Step 5Once the rice is cooked, spoon the rice into the pan and gently fold. Top with chopped parsley and serve.
