I'm always looking for ways to cook rice and so i came across this recipe. its super yummy in my book !

Ingredients
- 1 teaspoon vegetable oil
- 1/2 cup water
- 1 - onion , chopped
- 2 cloves garlic , minced
- 1 1/2 cups mushrooms, sliced
- 2 - green peppers, chopped
- 3/4 cup rice, instant and uncooked
- 3 cans kidney beans, drained
- 16 ounces can whole tomatoes
- 1 tablespoon chili powder
- 2 teaspoons cumin
- 1/4 teaspoon cayenne pepper
- 1 cup mozzarella cheese , shredded
How To Make beans & rice

Step 1Heat oil and water to a simmering . add onion , garlic,mushrooms, and green pepper, simmer until onion is tender about 10 minutes.

Step 2add uncooked rice ,beans, and tomatoes, chili powder, cumin, and cayanne .

Step 3cover and simmer about 25 minutes. checking occasionally to see if more water is needed .

Step 4transfer to oven proof dish sprinkle with mozzarella . bake at 350 for 15 minutes ... Enjoy !
