If you want the satiety and flavor of fried rice without the time-consuming hassle, try this dump-and-bake recipe that you will swear tastes exactly like the real thing. PLUS this version is loaded with lean protein!

Ingredients

  • 16 large eggs
  • 3 cups raw basmati rice
  • 3 cans chicken breast, drained well
  • 2 cans peas and carrots, drained well
  • 5 1/2 cups chicken broth
  • 3 tablespoons butter, cut into small pieces
  • 1/4 cup soy sauce
  • 1 tablespoon sesame oil
  • 1 1/2 teaspoons garlic powder
  • 1/2 tablespoon ground ginger
  • 1 pinch sesame seeds
  • salt & pepper to taste
  • 1 bunch green onions (optional)

How To Make aunt squishy's oven fried rice

  • Step 1
    Preheat oven to 375 F (190 C).
  • Step 2
    In a large roasting pan or baking dish, combine RAW rice, canned chicken (broken up well), peas and carrots, chicken broth, soy sauce, sesame oil, garlic powder, ginger, salt, and pepper. Stir well and ensure rice is evenly distributed.
  • Step 3
    Top with butter pieces, evenly distributing them.
  • Step 4
    Cover with a lid or tent VERY well with heavy foil, crimping thoroughly to ensure steam can't escape.
  • Step 5
    Bake 55-60 minutes. DO NOT REMOVE LID OR FOIL DURING BAKING!
  • Step 6
    Remove from the oven and let rest an additional 10 minutes. Again, DO NOT remove the lid or foil yet. The steam must stay trapped inside to prevent sticky icky rice!
  • Step 7
    While the rice is resting, cook the eggs. See tips for more information.
  • Step 8
    Once rested, uncover the rice and fluff with a fork. If using scrambled eggs, you can add them now and mix well, or for fried/other eggs, dish the rice into bowls and top with eggs.
  • Step 9
    Add a small sprinkle of sesame seeds and thinly sliced green onions on top. Serve with additional soy sauce on the side per taste.
  • Step 10
    TIPS: You can scramble all the eggs and add them to the bake once it's finished, like traditional fried rice, OR you can cook the eggs to order. I personally prefer them fried over easy so that the whites are cooked, but the yolks are runny, and then I serve them on top of the rice for a rich LocoMoco-esque version.
