A little spicy twist on brown rice.
You could add some cooked diced chicken for a full meal, if you like.

  • 3 c
    chicken broth (or any broth you prefer)
  • 2 c
    brown rice, raw
  • 3 Tbsp
    butter (i use unsalted)
  • 1 Tbsp
    chipotle chili powder (less if you prefer)
  • 1/4 tsp
    garlic powder
  • 1 tsp
    brown sugar, light
  • 1 tsp
    orange rind, finely grated
  • 1 c
    almonds, slivered

How to Make Almond Brown Rice


  1. In a medium saucepan, bring broth to a boil.
  2. Add rice, butter, chipotle powder, garlic powder, brown sugar and grated orange rind.
  3. Stir briefly; cover.
  4. Lower heat and cook for 30 to 40 minutes or until moisture is absorbed and rice is tender.
  5. Stir in almonds.
    Cover and let stand for about 3 minutes.
    Fluff rice with a fork, and enjoy.
