A little spicy twist on brown rice. You could add some cooked diced chicken for a full meal, if you like.

Ingredients

  • 3 cups chicken broth (or any broth you prefer)
  • 2 cups brown rice, raw
  • 3 tablespoons butter (i use unsalted)
  • 1 tablespoon chipotle chili powder (less if you prefer)
  • 1/4 teaspoon garlic powder
  • 1 teaspoon brown sugar, light
  • 1 teaspoon orange rind, finely grated
  • 1 cup almonds, slivered

How To Make almond brown rice

  • Step 1
    In a medium saucepan, bring broth to a boil.
  • Step 2
    Add rice, butter, chipotle powder, garlic powder, brown sugar and grated orange rind.
  • Step 3
    Stir briefly; cover.
  • Step 4
    Lower heat and cook for 30 to 40 minutes or until moisture is absorbed and rice is tender.
  • Step 5
    Stir in almonds. Cover and let stand for about 3 minutes. Fluff rice with a fork, and enjoy.
