A little spicy twist on brown rice.
You could add some cooked diced chicken for a full meal, if you like.

3 c
chicken broth (or any broth you prefer)
2 c
brown rice, raw
3 Tbsp
butter (i use unsalted)
1 Tbsp
chipotle chili powder (less if you prefer)
1/4 tsp
garlic powder
1 tsp
brown sugar, light
1 tsp
orange rind, finely grated
1 c
almonds, slivered

How to Make Almond Brown Rice


  • 1In a medium saucepan, bring broth to a boil.
  • 2Add rice, butter, chipotle powder, garlic powder, brown sugar and grated orange rind.
  • 3Stir briefly; cover.
  • 4Lower heat and cook for 30 to 40 minutes or until moisture is absorbed and rice is tender.
  • 5Stir in almonds.
    Cover and let stand for about 3 minutes.
    Fluff rice with a fork, and enjoy.
