yummy roasted sweet potato casserole

This is a great recipe. My family loved it. Please do not shortcut the roasting of the sweet potatoes, it takes away from the flavor.

Ingredients
- 4 cups roasted sweet potatoes
- 1/3 cup white sugar
- 2 - eggs, beaten
- 1/2 teaspoon salt
- 4 tablespoons butter, softened
- 1/2 cup milk
- 1/2 teaspoon vanilla
- TOPPING
- 1/3 cup packed brown sugar
- 1/3 cup all purpose flour
- 3 tablespoons butter, softened
- 1/2 cup chopped pecans
How To Make yummy roasted sweet potato casserole

Step 1Preheat oven to 400 degrees. Roast sweet potatoes wrapped in foil for 1 hr or until tender. Scoop out into medium size bowl and mash.

Step 2Lower oven to 325 degrees. .

Step 3Mix together the sweet potatoes, white sugar, eggs, salt, butter, milk and vanilla extract. Mix until smooth. Transfer to a 9x13 inch baking dish.

Step 4In small bowl, mix the brown sugar and flour. Cut in the butter until the mixture is coarse (I do this step in the food processor). Stir in the pecans. Sprinkle the mixture over the sweet potato mixture.

Step 5Bake in the preheated oven 30 minutes, or until the topping is lightly brown.
