Yummy Roasted Sweet Potato Casserole

This is a great recipe. My family loved it. Please do not shortcut the roasting of the sweet potatoes, it takes away from the flavor.

4 c
roasted sweet potatoes
1/3 c
white sugar
eggs, beaten
1/2 tsp
4 Tbsp
butter, softened
1/2 c
1/2 tsp


1/3 c
packed brown sugar
1/3 c
all purpose flour
3 Tbsp
butter, softened
1/2 c
chopped pecans


1Preheat oven to 400 degrees. Roast sweet potatoes wrapped in foil for 1 hr or until tender. Scoop out into medium size bowl and mash.
2Lower oven to 325 degrees. .
3Mix together the sweet potatoes, white sugar, eggs, salt, butter, milk and vanilla extract. Mix until smooth. Transfer to a 9x13 inch baking dish.
4In small bowl, mix the brown sugar and flour. Cut in the butter until the mixture is coarse (I do this step in the food processor). Stir in the pecans. Sprinkle the mixture over the sweet potato mixture.
5Bake in the preheated oven 30 minutes, or until the topping is lightly brown.
