Ingredients

  • 3 lb
    peeled and dices potatoes (about six)
  • 3/4 c
    plain greek yogurt
  • 1 1/4 c
    cauliflower
  • 1 bunch
    of fresh chives chopped
  • 4 Tbsp
    butter
  • ·
    salt and pepper to taste

How to Make Yogurt Whipped Potatoes

Step-by-Step

  1. Cover the potatoes and cauliflower with cold water ( enough to cover by at least 2 inches) and add a teaspoon of salt. Bring potatoes and cauliflower to a boil, reduce heat and simmer until tender. Drain potatoes and cauliflower, mash with masher and whip them with a stiff whisk. Whisk in yogurt, chives, butter and salt and pepper to taste. Serve immediately.
