This was prepared for our local symphony's rehearsal dinner during the Thanksgiving season. Those musicians really love their food and it's such a pleasure to see them enjoying a hearty dinner as a break in rehearsal. For them I prepared everything in this dish X 10.

Ingredients For yams casserole

  • 1
    large can yams, drained and mashed
  • 1/2 c
    melted butter
  • 3/4 c
    brown sugar
  • 3 Tbsp
    flour
  • 1 tsp
    baking powder
  • 1 tsp
    vanilla
  • 3
    beaten eggs
  • ~
    miniature marshmallows

How To Make yams casserole

  • 1
    Heat oven to 350 degrees. Mix first 7 ingredients together and put in casserole dish. Bake 30 minutes or longer if needed. Sprinkle top with miniature marshmallows and a few decorative pecan halves. Broil a few seconds, or until marshmallows are lightly browned.
