This recipe was given to me by a friend who prepared it for our local symphony rehearsal dinner. The symphony members ate it up (literally!) And even my hard-to-please husband gave it a thumbs-up.

Ingredients

  • 1 large
    can yams, drained and mashed
  • 1/2 c
    melted butter
  • 3/4 c
    brown sugar, firmly packed
  • 3 Tbsp
    flour
  • 1 tsp
    baking powder
  • 1 tsp
    vanilla
  • 3
    eggs, beaten
  • ·
    miniature marshmallows
  • ·
    optional: pecan halves

How to Make Yams Casserole

Step-by-Step

  1. Heat oven to 350 degrees.
  2. Mix ingredients together and put in casserole dish.
  3. Bake 30 minutes or longer, if needed. Sprinkle with miniature marshmallows and a few decorative pecans halves, if desired.
  4. Broil a couple seconds, making sure it doesn't burn.
