  • 1 medium red onion sliced
  • 1/2 cup olive oil
  • 1 cup dry white wine
  • 2 bay leaves
  • 4 cloves garlic minced
  • salt
  • fresh curly parsley chopped

How To Make wine roasted fingerling potatoes with onions

  • Step 1
    Preheat oven 375 degrees. In a roasting pan add the potatoes and onions. with the olive oil, wine, garlic, bay leaves and season with salt
  • Step 2
    Cover with foil and bake for 30 minutes. Uncover and bake until the potatoes are very tender and lightly glazed
  • Step 3
    Garnish with parsley
