  • 2 pounds parsnips, peeled and chopped
  • 2 pounds potatoes, peeled and chopped
  • 1/2 cup heavy cream
  • 2 tablespoons butter, plus more for serving
  • 1 quart shredded white cheddar cheese
  • freshly ground black pepper
  • parsley, for serving

How To Make white cheddar parsnips and potato mash

  • Step 1
    Cook the potatoes and parsnips in boiling salted water until soft. Drain and mash with heavy cream and salt. Stir in the white cheddar cheese. Spray a baking dish and preheat to 350 degrees F.
  • Step 2
    Add the potato mixture to the baking dish and dot with the 2 tablespoons of butter. Bake for 20 minutes. Stir and serve topped with butter and parsley Sprinkle fresh grated black pepper
