- 2 pounds parsnips, peeled and chopped
- 2 pounds potatoes, peeled and chopped
- 1/2 cup heavy cream
- 2 tablespoons butter, plus more for serving
- 1 quart shredded white cheddar cheese
- freshly ground black pepper
- parsley, for serving
How To Make white cheddar parsnips and potato mash

Step 1Cook the potatoes and parsnips in boiling salted water until soft. Drain and mash with heavy cream and salt. Stir in the white cheddar cheese. Spray a baking dish and preheat to 350 degrees F.

Step 2Add the potato mixture to the baking dish and dot with the 2 tablespoons of butter. Bake for 20 minutes. Stir and serve topped with butter and parsley Sprinkle fresh grated black pepper
