Whipped Yams and Winter Squash Casserole
acorn squashes, baked for 1 hour
2Scoop squash from skin and place in a large mixing bowl or food processor.
3Remove yam flesh from skin and add to squash.
4Whip or mash together, incorporating maple syrup and orange juice.
5Place mixture in casserole and dust with cinnamon and nutmeg to taste; Bake for 20 to 30 minutes.
