ultimate smashed potato pie
My love affair continues with potatoes and bacon...I can't begin to tell you how amazing this potato dish was, so I won't! LOL All I can say is, if you get a chance, please try this out. You won't be disappointed. Stove Top Cooking with Passion, sw :)

Ingredients
- 12 small honey gold potatoes
- 4 slices maple bacon, cut in pieces
- 1/3 stick unsalted butter
- 1 small black summer truffle, grated and divided
- 1 tablespoon chives, chopped & divided
- 2 teaspoons all purpose seasoning salt
- 1/2 teaspoon black pepper
- 4 ounces morel and leek monterey jack grated-publix brand
How To Make ultimate smashed potato pie

Step 1Boil potatoes in salty water for 15-20 inutes, until fork tender. Drain

Step 2Meanwhile, fry bacon pieces in a 8-9 inch skillet until crispy. Remove bacon from skillet and reserve bacon fat

Step 3Add potatoes, bacon, reserved bacon fat, butter, 1/2 of the truffles, 1/2 of chives, greek seasoning and pepper to a large mixing bowl.

Step 4Smash all the ingredients together and return potatoes and friends back to medium high skillet. Smashed down potatoes and top with cheese, remaining truffles and chives.

Step 5Let cheese melt and bottom of poatoes to get golden brown. Transfer to platter and enjoy. **can cover skillet to speed up melting the cheese**
