twist on mashed up potato salad

I saw an article in Rachael Ray's Magazine about 10 ways to remake potato salad. Number 5 was Chile and Cheese. I liked the idea but as normal for me I added some things that I like and omitted some things that I didn't want in there. In other words, I made it my own! I don't normally like to mess with potato salad, I like my southern potato salad and nothing else but this sure did change my mind! This is a great change of pace - a little spicy but not too much!!

Ingredients

  • 2 pounds small red potatoes
  • 2 large shallots, finely diced
  • 1/4 cup fresh cilantro, finely chopped
  • 1-2 can green chiles-4oz
  • 6 tablespoons mayonnaise
  • 6 tablespoons buttermilk
  • 1 cup pepper jack cheese, shredded

How To Make twist on mashed up potato salad

  • Step 1
    Bring large pot of salted water to boil. Add potatoes and cook until tender, approximately 15 minutes; drain, do not peel. Coursely mash the potatoes; set aside and let cool. Transfer to a large bowl.
  • Step 2
    To potatoes, stir in onion, cilantro(reserve small amount for top of salad)and chiles. Combine mayonnaise and buttermilk. Add to potato mixture; fold in well. To this add cheese and toss. Sprinkle with reserve cilantro.
