Do you love sweet potatoes like I do? Well this recipe will make a believer out of you if you aren't sure. I don't often add the pineapple, but it is up to you if you do!

6 if eating an entire potato, 12 if serving half per person


  • 6 large
    sweet potatoes, baked
  • 1/2 tsp
  • 1/4 c
    butter, melted
  • 1/2 tsp
  • 1/4 tsp
  • 3 c
    mini marshmallows
  • 1 c
    chopped walnuts or pecans
  • 8 oz
    crushed pineapple, optional

How to Make Twice Baked Sweet Potatoes


  1. Oven to 350 degrees. Cut each potato in half lengthwise and scoop out all but 1/8" from edge. Mix with 2 T butter, cinnamon, salt and nutmeg until smooth. Stir in 2 c marshmallows, pineapple, and 1/2 c walnuts. Spoon into shells. Toss remaining ingredients and sprinkle on top of potatoes. Bake 20 min and serve hot.
