My grandkids and children all love this side dish. Best part is it can be made ahead and frozen- I buy the potatoes when they go on sale and stock the freezer.

Ingredients For twice baked potato casserole

  • 6 lg
    baking potatos
  • 1 stick
  • 16 oz
    sour cream
  • 2 c
    shredded sharp cheddar cheese

How To Make twice baked potato casserole

    Wash potatoes, rub with vegetable oil, and bake at 350 for about an hour. Then scoop out all potato and add to bowl with butter. Use electric mixer to make this smooth. Stir in sour cream and cheese.

    Spray 9x11 pan with cooking spray. Pour combination into pan. Sprinkle with Paprika.

    Can be frozen at this point. otherwise bake at 350 for about 30 minutes
