How to Make Twice baked potato
- preheat oven to 400
- in a bowl mix a small amount of olive oil and add seasoning. place potatoes in bowl and roll to coat with oil. (sometimes I just pour some oil in my hands then rub it on the potatoes and then sprinkle with salt and pepper)
- Bake the potatoes until they are almost done
- let cool slightly then cut the potatoes "Hotdog style" scrape out the inside making a "canoe"
- mash all of the scooped out potatoes then place back into the potato. top with as much cheese as you want. Bake until the cheese melts
- top with sour cream and chives if youd like
