Ingredients

  • 4 c
    mashed potatoes
  • 8 oz
    mexican blend shredded cheese
  • 1/4 c
    bacon bits
  • 1 medium
    egg
  • 1 Tbsp
    butter
  • 1/2 c
    panko bread crumbs
  • 1/4 c
    panko bread crumbs
  • 1/4 c
    chives

How to Make Twice Baked Mashed Potatoes

Step-by-Step

  1. Make 4 cups worth of mashed potatoes. I use Hungry Jack instant and add garlic salt (to taste) while cooking.
  2. Once the potatoes are cooked, add the egg and mix well. Add most of the cheese, leaving just enough aside to lightly top.
  3. Add the 1/2 cup of panko bread crumbs, the bacon bits & the chives. Mix together well.
  4. Melt the butter in the bottom of a casserole dish.
  5. Transfer the potato mixture into the dish. Evenly.
  6. Add the remainder of the cheese and 1/4 cup of Panko crumbs evenly over the top.
  7. Bake at 400 degrees for 30 minutes.
