Such an easy and simple side dish. Works great with fried chicken or tenders. Enjoy!

Ingredients

  • 4 cups mashed potatoes
  • 8 ounces mexican blend shredded cheese
  • 1/4 cup bacon bits
  • 1 medium egg
  • 1 tablespoon butter
  • 1/2 cup panko bread crumbs
  • 1/4 cup panko bread crumbs
  • 1/4 cup chives

How To Make twice baked mashed potatoes

  • Step 1
    Make 4 cups worth of mashed potatoes. I use Hungry Jack instant and add garlic salt (to taste) while cooking.
  • Step 2
    Once the potatoes are cooked, add the egg and mix well. Add most of the cheese, leaving just enough aside to lightly top.
  • Step 3
    Add the 1/2 cup of panko bread crumbs, the bacon bits & the chives. Mix together well.
  • Step 4
    Melt the butter in the bottom of a casserole dish.
  • Step 5
    Transfer the potato mixture into the dish. Evenly.
  • Step 6
    Add the remainder of the cheese and 1/4 cup of Panko crumbs evenly over the top.
  • Step 7
    Bake at 400 degrees for 30 minutes.
