Ingredients
- 4 cups mashed potatoes
- 8 ounces mexican blend shredded cheese
- 1/4 cup bacon bits
- 1 medium egg
- 1 tablespoon butter
- 1/2 cup panko bread crumbs
- 1/4 cup panko bread crumbs
- 1/4 cup chives
How To Make twice baked mashed potatoes

Step 1Make 4 cups worth of mashed potatoes. I use Hungry Jack instant and add garlic salt (to taste) while cooking.

Step 2Once the potatoes are cooked, add the egg and mix well. Add most of the cheese, leaving just enough aside to lightly top.

Step 3Add the 1/2 cup of panko bread crumbs, the bacon bits & the chives. Mix together well.

Step 4Melt the butter in the bottom of a casserole dish.

Step 5Transfer the potato mixture into the dish. Evenly.

Step 6Add the remainder of the cheese and 1/4 cup of Panko crumbs evenly over the top.

Step 7Bake at 400 degrees for 30 minutes.
