tuna stuffed potatoes

This came from the "My Great Recipes" collection which I subscribed to in the mid-80's. It was a favorite dish of my oldest son who passed away from muscular distrophy in 2003 at age 13. You can substitute other cheeses, we usually use cheddar because we're all addicted to it. ;)

Ingredients
- 4 - large hot baked potatoes
- 1/2 cup hot milk
- 2 - green onions, minced
- 1 - egg
- 2 tablespoons butter
- 1 teaspoon salt
- 1 dash pepper
- 1 - medium tomato, diced
- 1 can tuna (7-1/2 oz), drained
- 2 tablespoons grated parmesan cheese
- - parsley for garnish
How To Make tuna stuffed potatoes

Step 1Heat oven to 400 degrees.

Step 2Cut thin slice from flat side of each potato. Scoop inside of potatoes into bowl. Mash, add hot milk, and whip until fluffy.

Step 3Add green onions, egg, and butter, whipping well.

Step 4Add salt & pepper, then fold in tomato and tuna.

Step 5Pile back into potato skins, mounting high. Place on cookie sheet.

Step 6Bake for 10 minutes or until heated through.
