This came from the "My Great Recipes" collection which I subscribed to in the mid-80's. It was a favorite dish of my oldest son who passed away from muscular distrophy in 2003 at age 13.

You can substitute other cheeses, we usually use cheddar because we're all addicted to it. ;)

    large hot baked potatoes
  • 1/2 c
    hot milk
  • 2
    green onions, minced

    medium tomato, diced
  • 1 can(s)
    tuna (7-1/2 oz), drained
  • 2 Tbsp
    grated parmesan cheese

    parsley for garnish

How to Make Tuna Stuffed Potatoes


  1. Heat oven to 400 degrees.
  2. Cut thin slice from flat side of each potato. Scoop inside of potatoes into bowl. Mash, add hot milk, and whip until fluffy.
  3. Add green onions, egg, and butter, whipping well.
  4. Add salt & pepper, then fold in tomato and tuna.
  5. Pile back into potato skins, mounting high. Place on cookie sheet.
  6. Bake for 10 minutes or until heated through.
